Potential healthy phytochemicals present in fruits and vegetables . Study of enzymes related to the loss of sensory and nutritional quality of fresh-cut vegetables and its relation to shelf life. Characterization of phenolic compounds ( phenolic acids and flavonoids ) tropical fruit and its relation to the reduction of deterioration processes .
